Lamb


Eastbrook tends to use a conventional south of England lamb. This is produced by crossing North Country Mule ewes with Suffolk sires. The farm also keeps a small herd of Hebridean ewes which are crossed with Suffolk sires to produce very distinctive lambs. During the winter we buy organic ‘in store’ lambs to keep for sale in the spring. These are the Scottish Blackface breed. If we need to buy from other sources then we opt for traditional breeds where possible as they deliver a better flavour.
