Eastbrook Farm has developed an innovative and humane method of producing organic veal. Every one of our calves gets its own nurse cow (which it might have to share with a couple of others) and the rosé veal produced is tender, like young beef, with flavour that comes through when we have hung the carcass for seven to ten days.
